how do you catch a fish out of a tank

Suppose the rocks cannot be moved.
Any tricks or methods are appreciated.

Fish trap. I have one that you could borrow, but I am in San Jose. It works great. It's basically an acrylic box with a swinging lid that you pull shut with some monofilament fishing line. You could always get one from Premium Aquatics or Drs. Foster and Smith. I've caught many fish this way.

If I have a particularly 'smart' fish to catch, like a wrasse or hogfish, I will starve the tank for a few days to make sure he's hungry... then put mysis inside the trap. You have to be patient, but it works.

Stupid fish like tangs just walk into the trap on their own. :P

You can make one at home too. just get a jar or plastic container and use the lid with a hinge and some string! Something along those lines :D

I can tell you this, I had a Kliens butterfly that I was ripping apart my rock work for 2 days stright trying to catch, never happened. I got Rich's trap put his favorite food in it (one of my prize candy cane, damn fish) and sat by the tank holding the trapdoor fishing line. Within 2 mins he was in the trap and boom I got em.
