temperature offset setting on ACjr

I'm looking at the aquanote and it has this thing call temperature offset. What is this for? Perry said something about this but I didn't know my controller has this function. Sorry for the dumb question ;D ..

So basically they're telling you to use the tried and true, mercury/alcohol thermometers to calibrate the probes. Man I need to get myself one with 0.1° resolution, the best I have is 1° Celsius, guess I should switch that to a Fahreinheit one as well since that by default has better resolution that Celsius.
