what to do with a whole crab

Courtesy of my somehow-related commercial fisherman uncle, I have a whole fresh caught/cooked crab in my kitchen. Any ideas what to do with it aside from the usual crack-and-snack? I know there's the chowder option, but that almost seems like a waste for fresh crab....



Also- anyone know where to get oysters at a better price than $14/dozen?
 
I'll keep that one in mind next time. Not sure if I really want to go buy more fish (live or dead), the GF is already mad at me for my last purchase.

Salmon work just as well?

You bet! It's a little thick, so a roulade works a little better with salmon, make sure you roll it using saran wrap and chill it real good before baking.

14 a dozen is probably for premium shooting oysters.. If you are going to just bake them just buy bbq grade.. You could marinade the crab ala lions club with a wine herb clarified butter setup.. First crab of the season is always best just cracked and eaten.. :) If you want, do a little mayo, crystals hot sauce, sesame oil and a dash of vinegar.. Makes a great dip for your fresh crab.. Dungeness imho are the best eating crabs out there.. Best flavor and texture by far..

The commercial crab season has gotten off to a slow start.. I've got a dozen crabs cooking in my turkey fryer right now :)
 
yeah, the 14/dozen was for shooting. I like my oysters raw.

Crab got put on hold, aside from the claws which I ate straight.

Sushi seemed like a slight waste. I'll try that mayo/hotsauce/oil/vin dip tomorrow. And are you frying the crabs!? Or just using the fryer for a giant boiler. How'd you get so many anyhows?
 
Hahahha.. I'm boiling the crabs, I just use the fryer because its the biggest pot I have.. I worked on boats my whole life so have lots of friends who still own both sportfishing/party boats and commercial boats.. Crab season is a good time for me.. Last year my family Od's on the crabs.. hahahah

14 a dozen for good shooting oysters is not that bad a price.. I prefer the cape cods. Not real big into the farm raised.. I like the ones they rake like the Warehams, or Chathams :) All Wild :0 If I have to eat farm raised the Beau Soleils are not bad.. They last a long time out of water in their crates.. I want to say the most expensive wholesale are the warehams at .95 cents each.. Everythign else runs from about .55-.80 cents each wholesale.. Ask Ian about halfshell clams :)
 
Haha sounds like my family back in the 90's. It got to the point where we were throwing away/giving away salmon from the previous season and trying to find new ways to eat fresh salmon. FWIW- salmon loaf is possible, but really...don't try it unless you have to.
 
I use to do alot of salmon kasu. You soak it in salt sugar and the leftover mash from making Sake.. You pack it in the stuff then throw it in the fridge for a year.. hahaha Really good..

I won't freeze fish. I'll keep what I want to eat then give the rest away so it can be eaten fresh.. I'd only bring home what I could eat that day or the next.. Everything else would make market..

This picture is one exception to that rule :) I did alot of canning and ate sashimi for 4 days :) I had 24 fish for a total of just over 4000lbs in 4.5 days of fishing..

Second best to yellowfin and bigeye.. Shiro Maguro !!! Also the best way to catch them to reduce lactic acid build up in the meat...

We weren't the ones working the boat, just ended up with a fish being given to us every now and then. We actually ran out of people to give it to fresh for a while too.

So where would one go to find Warehams, Chathams or Beau Soleils at decent prices?
 
Even after having lived in SD for 5 years, I have yet to go tuna fishing. And man, shiro maguro is good enough for me anyday. Oishii!

I live in Sunnyvale, and would be looking for 3-4 dozen at a time I guess? But it wouldn't be too often, maybe a few times a year max.
 
It probably wouldn'[t be feasible for you to come up to the city for that many You m ight as well try and find them down there. the $14 a dozen isn't too bad ifyou are only getting a couple of dozen.,.


Hhaahhaa Phong.. I was featured on bloodydecks.com , or something like that :) I caught 55 albacore in 30 minutes... I was on a roll that day...
 
I have to go fishing with you sometimes so you can so me some tricks. The biggest fish I ever caught was a 5-6 lbs catfish :-[ >:( ..
