Anybody Have Experience Setting Up a Temporary Aquarium in the Community?

Request from an amazing supporter of the environment, kids, and my classroom aquariums. (Also super cool - he worked on sequencing three chromosomes during the Human Genome Project.) His wife runs a summer camp in Livermore for kids with hand/limb differences and their theme is Underwater. He thought it would be great to have one or more aquariums set up in a common area for kids/teens to observe between activities and such - not work on. I'm guessing freshwater would be best but have no experience. Any ideas or experience you could share with me as a guide?
 
Should be doable with equipment and media/rocks from an established tank. Pair of clowns, couple other fish and nems in a 40 breeder very doable
 
Need some advice if possible:
Thought I was set but plans have changed. Last week after posting here I found out a former student is moving and a parent was happy for me to take their two small running freshwater tanks off their hands. So I went today to pick up as arranged to find both parents in a heated argument (did not know upcoming separation was reason for the move) and I will not be receiving the tanks. (Sorry for the family!)

Need feedback on possible Plan B:
Get Biocube 14 set up Monday with water change water and a rock (no sand) from bigger BC that is a clown/nem tank plus a Marine Pure-type media block from a different tank. Run that for a few days, then transfer a nem, few snails, and add a couple small clowns. This (with Kessil 80 or 160) would be saltwater setup for the camp.
Sound okay? Anybody seen small ocellaris or percs currently for sale? (Do not want to move my aged clowns.)

Use a 10g for maybe small cichlids temporarily? Can go tomorrow to FW LFS to gather info. (Never went earlier bc thought I was obtaining those established systems.) Can cichlids be barebottom and have floating live plants? I will look into rocks and driftwood for them, too. I think there is some at my school from a teacher who used them a year ago. Will also look into neocardina shrimp.
Just saw a setup on NextDoor that the seller says is running so it would be cycled and will likely take that.

Kinda panicking bc I do not know what I am doing and don't like operating last minute. Prepped and delivered some marine science and art activities for the camp yesterday, so if there are no tanks it would be okay.
