Lobster crab tank

Anybody have experience setting up a restaurant lobster/crab tank please contact me.

Here's my limited research:

no heater
no powerhead
no dosing
no light

yes skimmer
yes return pump
yes sump
yes chiller

Is there a type of salt that is safe for human consumption?

I plan to go KC Wholesale seafood near Neptune to research

I researched it a while back thinking of keeping crabs and lobsters alive to eat at home, but never did it.

Look for lobster salt mix. Never used this product so don’t know for sure, but it indicates restaurants use this.

 
I used to help take care of a lobster tank & trout tank at a restaurant in Tahoe when I was a kid.
Is this for your home use or commercial business? How long will they be in the tank?
Lobster tank was about 120 gallons..Their dirty dirty critters lol..Switched out a pound of carbon a week!. Definitely power heads to keep BB clean unless the filtration pump takes care of that I remember the tank had a closed loop system.. Big UV.. Chiller to keep water colder then 48F.. When water got warmer they killed each other with their small pinchers regardless when the large claws were banded they love to fight! Had a bubble bead filter that we back flushed weekly kinda like a pool filter set up.The rainbow trout tank was alot easier then the lobster tank. Was fun haven’t eaten lobster since lol

Since getting into this hobby I cannot see those live tanks the same. I'm over here wondering how high the nitrates are lol

Did that tank have\need a skimmer?

Yes had one of those external 3 ft cylinder skimmers that constantly overflowed untill I got the owners daughter to stop tossing in food scraps! Everything was external no sump since that large bead filter handled all the bio plus Im assuming helped the chiller alot. The trout tank was a river tank contestant current from left to right kinda like a double peninsula tank with 5 outputs on the left and 5 screened intakes on the right everything external no skimmer on that one. People loved picking out their own specific rainbow trout and watching it get netted for dinner..Turnover was every 4 to 6 days. Used lake water for water changes which was like 90%. For some reason people got attached to the lobsters so they didn’t move as fast or untill the chef would grab the hold overs and make bisk.
These were display tanks at a place in Tahoe City
 
I had one as a pet a year or 2 ago. I had it in a 20 long because it was going to be cooked for dinner. It lived for 3 months with no heater feeding it shrimp every day.
He was fun but hard to keep long term.
