Come on you only need to finish some of the broth, and if you eat the noodles super quick before they have a chance to absorb much more broth you practically are cheating!

I like meat and veggies in my Pho, So I order steak and brisket with veggies on the side. Then, they filled my bowl to the brim so I couldn't dump everything in at the beginning. Too bad I am a little eater and "had" to take half home for lunch today. Driving my manual car while holding the pho to keep it upright was tricky, but I made it.

I was all happy with that photo - always complain to my husband that every pho place we go never has veggies available.

The veggies in pho are the bean sprouts and basil. Never heard of bok choy in pho. My wife is Vietnamese.

I like eating my pho with cooked bean sprouts (replace the noodles with bean sprouts ) and have my toping of meats like steak and meatballs. I find it hard finishing a small size bowl of noodles
